Usage tips

How is our Umami Dashi fish stock made? The organic fish and seaweed we use for our dashi come from sustainable fisheries in FAO zone 34/57 in Spain. The fish is dried, cold-smoked and flaked. These raw materials are not available from German producers. Sourcing from Spain is the only responsible option for our products following the 2011 nuclear accident in the Pacific. Furthermore, we are the only producers of organic dashi stock made within the EU. For our stock, we mix tuna flakes, wakame seaweed and shiitake mushrooms with cold water and heat the mixture to 80°C. After simmering for 10 hours, the stock is seasoned with rice vinegar, salt and beetroot sugar, then bottled in sterile containers.
